After the success of the first Cake Symposium organized in Leuven (Belgium) in 2012, the Second International Cake Symposium took place August 25-26, 2014 in Boston MA (USA). The event was hosted by KU Leuven (Belgium) and UMass Amherst (MA, USA) and sponsored by Puratos (www.puratos.com) and AACC International (www.aaccnet.org). Attendees (103 in total) from 8 different countries (Belgium, Brazil, Canada, Japan, Mexico, Sweden, The Netherlands and USA) participated in this two-day event dealing with different aspects of cake systems. While cakes are very complex systems and gain economic importance worldwide, not much is known neither about ingredient functionality in cake systems nor about the chemical and physical processes during cake making. Different international recognized scientists with expertise in this complex world of cakes were invited to share their views and findings on different aspects of cakes.
